area. Just

Alpine areas
of Veneto,
it provides
a climate
for cool
varieties of

This bell
tower
was planned
by the
architect
Francesco
Maria Preti
from
Castelfranco
in 1743. It
was finished
in 1767. The
cusp dates
back to
1810. It has
been
seriously
damaged
during the
First World
War, but
suddenly
restored.
Today it is
considered
the symbol
of
Valdobbiadene.

“Malga
Cesen”
has a
production
limited in
Monte Cesen
(1569 m), in
Valdobbiadene
municipality.
It’s made in
mountain
houses
during
summer
pasturing
and only
from some
beef races.
It’s a
semi-cooked
cheese that
ripens in 30
to 60 days
and can be
eaten “in
loco” with
breath or
polenta,
fried or
grated to
flavour
dishes.

In this
region the
best way to
taste wine
is with a
plate of
sliced cold
meats,
especially
pork meats.
It’s an
authentically
symbol of
welcome.
The most
common cold
pork meats
are
OSSOCOLLO,
BACON,
SALAMI AND
SOPRESSA.
This is one
of the main
characteristic
of the
Pedemontana;
it’s served
with polenta
o “pan de
casada”,
homemade
white bread
with a glass
of good
wine. |

The air of
the hills
and the
right amount
of humidity
prevent
mould from
forming in
excess and
let the
headcheese
age slowly,
from 3 to 6
months.
Waiting this
period we
eat ”salame”,
the less
aged
sausage,
made with or
without
garlic; it
could be
also
grilled.
There are
various
types of
sausages and
pig snouts,
called
SALSICCE,
COTECHINI
and MUSET
particularly
eaten in
winter. |

Valdobbiadene
D.O.C.G. is
produced in
Sparkling,
Semi-Sparkling
and still
versions.
The
sparkling
version is
the iconic
one for the
denomination;
appealing
and
versatile,
it has
created its
own
distinctive
style of
drink. The
Sparkling
Wine (“Spumante”)
is produced
in Brut,
Extra Dry
and Dry
versions,
depending on
the residual
sugar
contained in
the wine:
“Brut” is
the driest
style, “Dry”
the
sweetest. |

What is Prosecco? |
 |
|
Prosecco is a term
applied to a
specific type of
wine as well as the
grape that is used
to make it. The
Prosecco grape is
primarily grown in a
region of Italy
known as Veneto. It
is also grown in the
Valdobbiadene and
Conegliano wine
regions, both north
of Venice. Prosecco
grapes ripen later
than most other
grapes.
Prosecco wine is a
crisp sparkling
white wine with a
slightly bitter
aftertaste. In fact,
Prosecco grapes are
used to make two
types of sparkling
wine. They can be
used to make
spumante, a dry
sparkling wine,or
frizzante wines,
which are
semi-sparkling. |
